Quick and Yummy….

this is the kind of thing i eat on a weekday when i have lunch by myself in between felting:

a pulau a la nicole – it takes me 5 minutes to put it on the stove and then i can go back to work while it takes another 15-20 minutes for the pulau to cook:

fry a teaspoon of panch phoran (indian spice mix of black mustard, fenukreek, cumin, fennel and nigella seeds – or use any of these), a cinnamon stick, a couple of cardamon pods, a few curry leaves (optional) and diced capsicum for a few minutes in hot ghee…

add 1/2 a cup of basmati rice and salt and curry powder to taste and fry with the spices for a few more minutes, stirring frequently…

then add 1 cup of hot water and some chopped vegetables – today i had broccoli and carrot…

allow to simmer on low heat for 15 minutes or until the rice and veggies are cooked.

try and experiment with different spices – moroccan  is great too – and veggies: peas, cauliflower, green beans… and multiply the amount of rice, veggies and water for a family meal.
