Making Raw Chocolate Gianduja

another amazing book that i got for my birthday is matthew kenney's 'everyday raw deserts'. this book is seriously mouth-watering – every recipe looks sooooo yummy!

and yesterday i had a great excuse to try one of them: the teenager (he-who-does-not-like-to-be-named-or-photogaphed) turned 17 and we are having a little birthday morning tea today. my mum is baking him a cake and i made the gianduja…


this stuff is just divine and literally melts on your tongue and leaves you with crunchy hazelnuts… mmmmh…

it's also easy to make:

you blend a cup of melted cacao butter with 2 scraped vanilla beans, 1 tsp hazelnut extract and 1/2 tsp salt in the vitamix until smooth. then add 1 cup agave nectar, 1 cup cacao powder and 1/2 cup hazelnut butter and blend until combined. stir in 1 cup coarsely chopped hazelnuts, pour into a pan and refrigerate until set.


i can't wait to try the other recipes… i mean, how amazing does this sound?…
